Preserving Vitamins in Food
Store food away from heat and light and eat soon after purchasing.
Cut fruit and vegetable as close to cooking and serving time as possible.
Do not soak vegetable before you cook them.
Cook in as little water as possible.
Microwave, pressure-cook, roast, grill, stir-fry, rather than baking or boiling.
Use water from cooking vegetable to make soups and sauces.
Do not over-rinse rice before cooking, it washes away water-soluble vitamins.
